DECATUR — When local restaurant owner Craig Wilson decided to open his newest business BC Wings with business partner Brent Sloan, he wasn’t a wing fan.
“I always thought they were too much work,” he said. “But now I love them.”
Wilson and Sloan are veteran Decatur restaurant owners with more than 20 years of experience between them. They're each established through their other businesses — Sloan's Calzones for Sloan, and Sliderz Bar and Grill, Woody's and Pass the Buck for Wilson.
Their collaborative venture, located in the Quick Shop 66 strip mall at 1320 N. Water St., serves two styles of wings, regular and signature, drenched in one of 10 sauces or served plain.
“We stepped it up to the next level,” Sloan said. “The meat of our chicken (at BC Wings) has the extra added flavor.”
The signature wings are brined, or soaked in a salt water solution, for 48 hours before being cooked in a special blend of spices. “It has flavor to the bone,” Sloan said. “That’s what the brining process does.”
Operations manager Chad Denning said the process for the regular wings is a simple one, while the signature wings require more patience. “They have a nice garlicky, chicken-based flavor all the way through them,” Denning said. “The outside gets extra crispy.”
The restaurant also offers boneless wings with the same sauce options, which range from mild teriyaki sauce or garlic Parmesan to the spicy atomic sauce. The menu includes side items of french fries, potato salad and baked beans, and appetizers of spicy jalapeno corn bites and mac-and-cheese bites. Beer and soft drinks are also served.
Along with the regular menu, the restaurant will offer a special sauce flavor of the month. For August, it'll be tropical habanero. “We will switch them up every month,” Sloan said.
Since the restaurant opened quietly at the beginning of June, Sloan and Wilson have held several surprise events allowing customers to win prizes, including a 12-piece combo each month for an entire year.
Feedback so far has been positive, and they hope to expand to multiple locations eventually and to collaborate with other local restaurants on "wing nights."
While the restaurant has been gaining popularity, the owners expect to be even busier in the fall, with expanded hours and game-day specials during football season.
Plans for the current restaurant include a video gaming room, although Wilson described gaming as a "bonus."
“We are in this for the wings," he said.
